Mozzarella, in fact, undergoes a traditional smoking process that can give it a distinct and characteristic flavor.

Smoking is a very ancient process that originated in order to better preserve foods such as cheese, meat, and fish. Until a few decades ago, smoking was done following a much more homemade procedure: it was, in fact, done at home inside fireplaces. All families who owned at least one cow milked it, and various cheeses were made and smoked. Until a few years ago, after the long production process that leads to the creation of mozzarella, the mozzarellas were placed in a cylindrical container whose top is closed either by damp straw or a wet cloth. Today, however, the smoking process takes place inside special smoking cabinets that ensure hygiene, and special filters are used for the fumes released. Here the product is exposed to the fumes produced by burning more straw, which penetrate the cabinet and begin the smoking process. The mozzarella begins to darken, with a rind that changes from white to dark yellow and takes on a delicious smoky flavor.
